Chef Jason Rullo has trained with various Chefs throughout his 35 year culinary career. As a young man he learned the art of breakfast and pastry in Cape Cod, Ma. before turning his focus to his roots: Italian food. From there he took those skills and his Nonna's advice (as well as her Pasta e Fagioli recipe) and began working in Italian fine dining restaurants in New Jersey. This led to Private Chef work and high-end catering in NYC and the tri-state area. Once established in New Mexico, Jason opened "Joe Mamas" food truck from 2012-2015. Also a very accomplished drummer, Jason has traveled to over 50 countries as a professional musician. As a traveling Chef and foodie Jason is always seeking out food culture to find hidden gems and local flavors, techniques, history and recipes. With this approach Jason was able to expand upon his culinary foundation in a very unique way. This is where the fusion comes in, dishes inspired by these travels and experiences.
